This healthy meatballs and veggies flatbread pizza takes only 10 minutes to make and it is the perfect weeknight dinner or a quick lunch. Use whatever leftover meat and veggies you have on naan bread or flatbread to put a unique and healthy twist on the usual pizza night.

This flatbread pizza recipe is ready in 10 minutes and with only 5 ingredients, you will have a healthy meal in no time. It is also very versatile, so the whole family will love it!

What could be better than a pizza topped with meatballs, veggies, and cheese? How about a quick and healthy flatbread pizza that is made with leftovers from the dinner you made the night before. These types of recipes are honestly my favorite to make. Flatbread pizzas are so quick and easy to make and are perfect for a weeknight or weekend dinner.

So, I made homemade beef meatballs for dinner the night before. They were very simple to make. I mixed ground beef, with some spices and cheese. Shaped the mixture into meatballs and baked them in the oven. We had three of them left. I also sauteed some onion and green peppers with a little bit of olive oil, salt, and black pepper. I very often have some naan bread or flatbread in the pantry and I make healthy pizzas for us all the time. Using leftovers to make these homemade pizzas is my favorite way to use up leftovers and I have made these so many different ways.

Budget-Friendly – This recipe is very budget-friendly. It only needs 5 ingredients that you most likely always have on hand. Since I am using leftovers, this recipe is budget-friendly and helps us save some money.

Versatile recipe – this recipe is very versatile. Feel free to use any leftovers you have in the fridge. I always have leftovers after Thanksgiving or Christmas, or hosting any event. You can use any meat you have left over, any vegetables, as well as any sauce you have on hand.

Ingredients and Substitutions

  • Flatbread you can use flatbread or naan bread. You can also use homemade or store-bought pizza crust. There are so many flatbread options on the market now that you are sure to find one that works for your dietary needs. You can use gluten-free, low-carb, or any other one you prefer.
  • Meat – I had leftover meatballs (mini meatloaf) leftovers so that is what I used. Feel free to use any leftover meat you have. You can use turkey, pork, ham, or rotisserie chicken.
  • Cream cheese – I used cream cheese for the base sauce but tomato sauce or alfredo sauce can be substituted here.
  • Vegetables – I am using sauteed pepper and onions in this recipe. You can use spinach, artichokes, asparagus, corn, green beans leftovers, or any other veggie you prefer or have in your fridge.
  • Cheese – I used a six-cheese Italian mix for this recipe, but any cheese will work here. You can use feta cheese or goat cheese as well.

How to make this quick and easy leftover homemade pizza

Place your naan or flatbread on a baking dish. In a small bowl, combine 3 tablespoons of softened cream cheese and 2 tablespoons of shredded cheese Spread this cheese mixture on top of the flatbreads.

Cut up the meatballs (meatloaf) into thin slices and arrange in a single layer on top of the cheese layer. Then add the veggies.

Top with a generous amount of shredded cheese. Bake in the oven until cheese is melted and bubbly. Turn on the broiler for the last 5 minutes until the cheese is nice and golden brown.

What to serve with this healthy flatbread meatballs and veggies pizza

  • Fresh veggies – I love serving this pizza with some fresh tomatoes cut into wedges and seasoned with salt and freshly ground black pepper.
  • Leafy salad – you can serve it with a nice leafy lettuce salad, perhaps a Caesar salad or a Greek salad.

  • 2 Flatbreads or naan breads

  • 1 cup sauteed peppers and onions or any other veggies

  • Pre-heat oven to 350°F.
  • Place your naan or flatbread on a baking sheet.
