My banana walnut chocolate chip cake recipe is a twist on that classic banana bread recipe. It is loaded with chocolate chips and sprinkled throughout with delicious walnuts and it only takes 10 minutes of prep! Mix the ingredients in one bowl, bake and enjoy. It’s that easy!

I have made plenty of loaves of banana bread but I wanted to come up with other recipes and ways to use those 2-3 ripe bananas that I often have left sitting on the counter looking sad. So, I came up with this deliciously sweet, easy-to-make, and moist chocolate chip banana walnut cake recipe that is made in one bowl! So, do not throw away those ripe bananas, but instead turn them into this easy banana cake recipe with chocolate chips and nuts that you and your family will love!

Ingredients and Substitutions

  • Bananas – you will need ripe bananas, use very ripe, almost ready-to-trash bananas.
  • Eggs – room temperature eggs
  • Butter- I usually use salted, melted butter when I make desserts. You can of course use unsalted butter.
  • Brown sugar- I used light brown sugar. You can use dark brown sugar.
  • Flour – I use all-purpose flour, but you can use baking flour as well.
  • Vanilla extract – I love adding pure vanilla extract to this banana cake. It adds a delicious flavor to the cake.
  • Chocolate chips- I use regular semi-sweet chocolate chips or dark chocolate chips. Milk chocolate chips would be way too sweet, in my opinion. You can also use mini chocolate chips if you have them in your pantry.
  • Walnuts- I used walnuts for this recipe. However, you can skip them or use a different nut like pecans.
  • Baking powder – helps the cake rise and fluff.

How to make this easy and moist banana walnut chocolate chip cake

Start by mashing the bananas with a fork. Melt the butter in the microwave and set it aside.

In a large mixing bowl crack the eggs, add the melted butter, the brown sugar, and the vanilla extract. Mix with a whisk or a handheld mixer on medium speed until all the ingredients are combined. Add the mashed bananas to the bowl and stir well to incorporate the bananas into the mixture.

Add the flour and the baking powder. Stir with a spoon until it is all combined well. If you have whole walnuts, chop them up. Add the chopped walnuts and the chocolate chips. Stir well.

Grease the bottom of a round baking dish and pour the mixture evenly. Bake until golden brown. Take it out of the oven and let it cool for 10-15 minutes before slicing it. Enjoy!

Helpful Tips

  • Make sure to use very ripe bananas. If yours are not there yet, you can microwave them. Pierce the banana with a fork a few times and microwave it for 30 seconds – 1 minute.
  • You can omit the nuts if you are not a fan. Or you can use pecans, or hazelnuts instead if you like them better than walnuts. You can also use semi-sweet chocolate chips but I find them too sweet.
  • Swap the chocolate chips for your favorite dark chocolate bar
  • Skip the chocolate chips if you do not like chocolate
  • Do not overmix the ingredients or the cake will become too dense.
  • To store: cover the leftover banana cake with foil and store it in the fridge for up to a week. You can also freeze it by wrapping it tightly in foil and then placing it in an air-tight food storage bag or container.  When you are ready to enjoy it, you can simply place it in the fridge overnight to thaw. To warm up, place a piece on a microwave-safe plate and microwave until the desired warmness.

Ingredients
  

  • 4 bananas mashed
  • 2 eggs room temperature
  • 1 stick of butter melted
  • .5 cup brown sugar
  • 1 teaspoon pure vanilla extract
  • 1.5 cups all purpose flour
  • 1 teaspoon baking powder
  • 1 cup chocolate chips semi-sweet
  • 1 cup walnuts chopped

Instructions
 

  • Preheat the oven to 350°F and lightly oil or spray a 10-inch round cake pan or 13" x 9" baking pan.
  • Melt the butter in the microwave and set it aside.
  • In a small bowl, mash up the bananas using a fork.
  • In a large mixing bowl crack the eggs, add the melted butter, the brown sugar, and the vanilla extract.
  • Mix with a whisk or a handheld mixer on medium speed until all the ingredients are combined.
  • Add the mashed bananas to the bowl and stir gently to incorporate the bananas into the mixture.
  • Add the flour and the baking powder.
  • Stir with a spoon until it is all combined well.
  • If you have whole walnuts, chop them up. Add the chopped walnuts and the chocolate chips. Stir gently.
  • Transfer the cake batter to the prepared cake pan. Bake on the center rack of the oven 50 to 55 minutes, until golden-brown around the edges.
  • Take it out of the oven and let it cool for 10-15 minutes before slicing it.
  • Sprinkle with some powdered sugar and enjoy!
