Kielbasa – I like using either smoked or Polish kielbasa for this recipe. If you don’t have kielbasa, you can substitute it with smoked sausage, andouille sausage, or even cooked chicken or turkey sausage.

Rice – I use long-grain rice but any rice you like and have on hand will work for this rice dish. You can use brown rice, jasmine rice, or even quinoa for a healthier, whole-grain option. Keep in mind that brown rice may need a bit more liquid and longer cooking time.

Onion – Yellow, Vidalia, or red onion work great here. some minced garlic can be added as well for extra flavor and depth.

Diced tomatoes – fire-roasted tomatoes or even a can of diced tomatoes with green chilies could be used for some mild heat.

Water – I use water but chicken or vegetable broth will work great as well.

Optional – for an additional flavor, feel free to mix in and also sprinkle on top your favorite shredded cheese, like Monterey Jack, mozzarella, or a Mexican blend. If you want a smoky flavor, try smoked gouda or smoked cheddar.

Also, you can go ahead and use any veggies you’d like. You can add some diced bell peppers, broccoli, spinach, or any other veggies you love.

Seasonings – I love using salt, pepper, garlic powder, and pastry for this dish. Paprika, chili powder, or cumin can also be used for an additional flavor.

How to make this easy sausage and rice casserole

Firstly, preheat your oven to 350°F.

Then in a large skillet or oven-safe pot over medium heat, add in the diced onion and cook until the onion is translucent.

Add in the kielbasa and cook it until slightly crispy on the edges. This roaster pot is similar to mine and works great for this one-pot recipe.

Add in the rice, and stir well to combine. Toast the rice for about 1 minute, which helps enhance its flavor. Then add the diced tomatoes (not drained).

Pour in the water. Add the seasonings and mix it all together. Taste it and adjust the seasonings to your liking. Cover the pot and transfer it to the preheated oven. Cook covered for 20 minutes or until the rice is cooked.

Sprinkle with shredded cheese and garnish with parsley before serving.
