Easy One Pot Kielbasa and Rice Bake Recipe

Ingredients
  

  • 14 oz. kielbasa sliced into about 1 in. slices or halves
  • 1 tbsp. oil olive
  • 1 cup rice
  • 1 can diced tomatoes
  • 3 cups water
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • Shredded cheese optional
  • parsley optional

Instructions
 

  • Firstly, preheat your oven to 350°F.
  • Then heat the oil in a large skillet or oven-safe pot over medium heat.
  • Add in the diced onion and cook until the onion is translucent.
  • Add in the kielbasa sausage and cook it until slightly crispy on the edges.
  • Add in the rice and stir well to combine. Toast the rice for about 1 minute, which helps enhance its flavor.
  • Then add the diced tomatoes (not drained).
  • Pour in the water.
  • Add the seasonings and mix together. Taste it and adjust the seasonings per your liking.
  • Cover the pot and transfer it to the pre-heated oven. Cook for 20 minutes or until the rice is cooked.
  • Sprinkle with shredded cheese and garnish with parsley before serving.
