Easy One Pot Kielbasa and Rice Bake Recipe

- 14 oz. kielbasa sliced into about 1 in. slices or halves
- 1 tbsp. oil olive
- 1 cup rice
- 1 can diced tomatoes
- 3 cups water
- 1 tsp garlic powder
- Salt and pepper to taste
- Shredded cheese optional
- parsley optional
Firstly, preheat your oven to 350°F.
Then heat the oil in a large skillet or oven-safe pot over medium heat.
Add in the diced onion and cook until the onion is translucent.
Add in the kielbasa sausage and cook it until slightly crispy on the edges.
Add in the rice and stir well to combine. Toast the rice for about 1 minute, which helps enhance its flavor.
Then add the diced tomatoes (not drained).
Pour in the water.
Add the seasonings and mix together. Taste it and adjust the seasonings per your liking.
Cover the pot and transfer it to the pre-heated oven. Cook for 20 minutes or until the rice is cooked.
Sprinkle with shredded cheese and garnish with parsley before serving.
