Have you ever heard of Tutmanik? Tutmanik is a Bulgarian cheese bread made with yogurt, eggs, flour, and feta cheese. In Bulgaria, it is mostly served for breakfast but we enjoy it really any time of the day. This bread is also perfect for an afternoon snack or a delicious side dish at dinner. While it can be made in different varieties, this particular recipe is among the easiest and tastiest cheese bread recipes you can make at home from scratch!

I have so many fond memories of growing up in Bulgaria and this delicious homemade bread was a big part of my childhood. Every family in Bulgaria makes this amazing Tutmanik almost on a weekly basis. It is made with only a handful of ingredients and it goes with everything. It can be enjoyed with perhaps a little bit of butter, a bit of jam perhaps, or just on its own.

I now make it for my own family. My children love it as an afternoon snack. I love to see their faces when they come back from school and are greeted home by the amazing aroma of this cheesy bread.

It is instead very moist and fluffy. This no-knead cheese bread will become one of your favorite no-knead bread recipes and you will find yourself making it often.

Quick and easy – the fact that there is no kneading involved at all, means you get to enjoy this cheesy goodness in no time. With a handful of ingredients and ready in 30 minutes, this bread is one of my favorites and it will surely become one of my favorite bread recipes to make.

Versatile recipe – This recipe is very versatile. I have made this Tutmanik in several different ways. I substitute the cheese in this bread recipe depending on what I have in our fridge. The traditional way to make this bread is with feta cheese and it is absolutely amazing, but I do not always have feta cheese on hand, and I also know that not everyone has feat cheese in their fridge at all times. But most people have cottage cheese at least and most definitely some other kind of shredded cheese. The recipe I am sharing here uses a combination of both cottage cheese and shredded mozzarella cheese. Overall, the cottage cheese adds moisture, flavor, tenderness, structure, and nutritional value to this no-knead cheese bread recipe.

  • All-purpose flour

How to make this easy no-knead cheese bread

In a large mixing bowl, crack the eggs and break them up with a fork or a whisk. Add in the oil. In a small bowl, mix the yogurt and the baking soda and stir well. You will notice that the soda will activate and the yogurt will start bubbling and rising. Add the yogurt to the bowl with eggs.

Then add the cottage cheese, the mozzarella cheese, and the flour. I always add our Bulgarian savory seasoning as well. It works so well for this bread recipe.  It can be purchased in most international food stores as well as online here.

Mix all the ingredients until well combined. Spray a round baking dish with cooking oil spray or you can use a rectangular one as well. Pour the mixture into the baking pan and bake it in the oven until a toothpick comes out clean and the top is golden brown.

Ingredients
  

  • 4 eggs
  • 2 cups all-purpose flour
  • 1 cup yogurt
  • 1 tablespoon baking soda
  • 1/2 cup vegetable oil
  • 10 ounces feta cheese or 5 ounces cottage cheese
  • 1 cup shredded cheese mozzarella or provolone
  • 1 teaspoon Savory seasoning

Instructions
 

  • Preheat oven to 350 F degrees.
  • In a large mixing bowl, crack the eggs and break them up with a fork or a whisk.
  • Add in the oil.
  • In a smaller mixing bowl, mix the yogurt and the baking soda and stir well. You will notice that the baking soda will activate and the yogurt will start bubbling and rising.
  • Add the yogurt to the bowl with the eggs.
  • Then add the cottage cheese (or feta), the mozzarella cheese, the flour, and the savory seasoning.
  • Mix all the ingredients until well combined.
  • Spray a round baking dish with cooking oil spray or you can use a rectangular one as well. Pour the mixture into the baking pan and bake it in the oven until a toothpick comes out clean and the top is golden brown, around 25-30 minutes.
  • When removed from the oven, the pan is covered with a cotton cloth for ten minutes.
  • Cut into triangle or square pieces and enjoy!

Notes

  • Make sure you use fresh baking soda. That will ensure that the bread rises nicely.
  • Keep in mind, if you use feta cheese, the bread will be a bit dryer than if you use cottage cheese. Not dry but just less moist as the cottage cheese adds moisture to the dough, resulting in a soft and tender texture in the finished bread.
