- Sesame oil – using sesame oil for this recipe does make a difference in the overall taste of this dish. The sesame oil gives it a bit of a nutty and toasty flavor, but you can of course substitute with olive or vegetable oil.
- Ground meat – I love using ground turkey for this recipe. It makes it so light and healthy. But any ground meat will work. You can use ground chicken, beef, or pork.
- Coleslaw mix – I use bagged coleslaw mix. It makes my life so much easier and allows for this meal to be cooked in less than 20 min from start to finish. You can also use any veggies you want here – shredded cabbage, shredded carrots, broccoli slaw mix, mushrooms, green onions, and cauliflower. The possibilities are endless!
- Stir fry sauce – you can use your favorite brand of stir fry sauce. I usually just use a low-sodium soy sauce. You can also use coconut aminos, tamari, hoisin sauce, sriracha, or red chili paste.
- Eggs – I love adding scrambled eggs to the dish. It adds some extra protein and another layer of flavor!
How to Make Egg Roll in a Bowl
Start by cooking the ground turkey in a tablespoon of sesame oil. Break it up into small pieces using a spatula or this amazing meat masher. Season it well with spices. If you wish, you could also add diced onion and garlic.
Once the ground turkey is nicely browned, add the coleslaw mix.
Sauté until the coleslaw is tender.
Make a well in the middle of the skillet and add the lightly beaten eggs. Scramble them and then combine them with the turkey and slaw mixture.
Season and add the soy sauce.
To serve, garnish with parsley or cilantro, green onions, and sesame seeds.

Easy 20-minute Egg Roll in a Bowl
Ingredients
- 1 pound ground turkey can substitute with ground pork or ground chicken
- 1 14-16 ounces bag of coleslaw mix
- 1 tablespoon sesame oil
- 3 tablespoons low-sodium soy sauce
- 5 eggs
- 1 teaspoon garlic powder
- salt and pepper to taste
- 1 small diced onion (optional)
- parsley green onions, cilantro, and sesame seeds, to garnish (optional)
Instructions
- Heat oil in a large pan or skillet, add the ground turkey, and break it up into small pieces with a spatula or a meat masher, as it cooks.
- Cook until no longer pink and it is browned. Season with salt, pepper, and garlic powder.
- Add the coleslaw mix. Cook for another 5 minutes or until desired tenderness.
- Crack the eggs in a bowl and lightly beat the eggs with a fork or a whisk. Add a pinch of salt and pepper.
- Make a well in the skillet/push the meat and slaw mixture to the sides of the pan.
- Add the eggs to the middle of the skillet. Gently stir them until the eggs are cooked.
- Stir the eggs into the rest of the mixture to combine.
- Add the soy sauce and stir well.
- Garnish with parsley, green onions, cilantro, or sesame seeds
