Ingredients and Substitutions
- Eggs – I love making these breakfast sandwiches with fried eggs, but you could also make them with scrambled eggs, pan-sheet eggs, or muffin pan eggs.
- English muffins – I make my freezer breakfast sandwiches with an English muffin because I think English muffins store best in the freezer, and my family loves them. You could also try making them with bagels, or croissants.
- Bacon – I love using the cooked bacon you find in the grocery store but you can definitely cook your bacon, or use sausage instead.
- Cheese – any sliced cheese works great for this recipe. You can use American, Provolone, mozzarella, Swiss, or any other kind of cheese you like.
- Butter – I like to spread some butter or margarine on the bread for an extra flavor. But this could be skipped, if you don’t like butter.
To make these breakfast sandwiches even healthier, here are other substitutes you can use include:
- Bagel thins or whole wheat bread slices instead of English muffins
- Canadian bacon or turkey sausage
- Cheese spread (laughing cow cheese wedges) instead of the cheese slices
- Egg whites instead of full eggs
- Bake the eggs instead of frying them
How to make these fried egg make-ahead freezer healthy breakfast sandwiches
Melt butter in a skillet over medium-high heat. Crack the eggs into the skillet and season them with salt and pepper. Cook for 2-3 minutes until the bottom of the eggs are set. Then flip and cook for 1 more minute.
In the meantime, split the English muffins and broil them on each side. Then spread the butter on each English muffin half. Set aside.
Remove the eggs from the pan, place them on a large plate or a cutting board, and set them aside. Add the bacon to the pan. I use cooked bacon, but I like to warm it up a bit and crisp it up.
Start assembling the sandwiches. Add a slice of cheese, or half a slice to each English muffin half. Then follow up with a fried egg. Then a piece or two of the bacon and close them up.
How to store and reheat these breakfast sandwiches
Note: Just because this is a recipe for freezer breakfast sandwiches doesn’t mean you can’t enjoy them right away! If you’d like, go ahead and enjoy them immediately after you make them.
I make 6 sandwiches at a time and I do not have to freeze them. I wrap them nicely and place them in the fridge. They are good in the fridge for a week.
To freeze the breakfast sandwiches, you’ll want to wrap each one individually in plastic wrap or aluminum foil for the freezer. I wrap them in a napkin first to absorb any moisture, and then plastic wrap or foil. This keeps the sandwiches intact and makes it easy to grab just one to heat up for breakfast. Place the wrapped sandwiches into a freezer bag or container to keep them neat in your freezer. They will keep for up to 2 months.
How to Reheat a Frozen Breakfast Sandwich
- If you are keeping them in the refrigerator and not freezing them, simply unwrap the sandwich and place it in the microwave for a minute or until warmed through.
- If frozen, thaw the frozen breakfast sandwiches in the fridge overnight and then simply reheat them in the microwave. Or if you want to enjoy a sandwich the same morning, remove the plastic wrap and wrap the sandwich in a paper towel. Microwave for 1 minute on defrost or 50% power. Flip the sandwich over and microwave for 30 seconds- 1 minute on high power, until warmed through.
