Ingredients and Substitutions
- Mini sweet peppers – If you cannot find mini peppers at your store, you can cut up bell peppers into thick strips and cook them the same way as the mini peppers and they will work just as well.
- Ground beef or you can use any other ground meat – turkey for an even healthier alternative, ground pork or ground chicken.
- Garlic powder, salt and pepper
- Cheese – use your favorite shredded cheese
- Optional fillings – you can use taco seasoning, ground cumin, or chili powder for some kick. You can also add some diced opinions, tomatoes, canned or refried black beans, and queso. I had some leftover queso, about 2 tablespoons and I added that. You can even add salsa if you’d like.
Optional Toppings:
- Diced tomatoes
- Diced romaine lettuce
- Chopped green onion
- Queso or Guacamole, or diced avocado
- Diced jalapenos (fresh or jarred)
- Sliced olives
- Finely chopped red onion
- Chopped cilantro
- Salsa
- Roasted corn (frozen and defrosted or fresh)
- Refried beans or black beans
- Sour cream or yogurt
How to make these easy air fryer low-carb mini stuffed peppers nachos

Slice the peppers lengthwise, then remove the stem and seeds.
Preheat your air fryer. This is my air fryer and I love it. I also use these air fryer liners and they make cleaning up a breeze. Spray the liner with a cooking spray. Arrange the peppers in a single layer on the air fryer liner. It is fine if their sides are touching. Then into the air fryer they go for 5-10 minutes or until they roast on the edges nicely.
Meanwhile, in a large skillet over medium heat, add the ground beef and cook through, breaking up the beef into small pieces. Season well with salt, black pepper, and garlic powder. Add in your optional fillings at this point. I only added some leftover queso that I wanted to use up.
Add the ground meat mixture to each mini sweet pepper. Top with shredded cheese. If you’ve tightly packed the peppers on the air fryer liner or roasting pan, you can blanket the cheese over the top. Put them back in the air fryer for another 8-10 minutes until the cheese is nicely melted and golden brown.
Alternatively, you can cook your mini pepper nachos in the oven instead. Broil them on high for 3 minutes. This will also allow the cheese to melt and brown a bit.
Remove from the air fryer and garnish with your favorite toppings. Enjoy!
Serving suggestions
These mini pepper nachos are best served up right away, once garnished, don’t forget the sour cream, or Greek yogurt and the fresh scallions!
How to store – You can store these mini pepper nachos in the fridge for up to 3 days after cooking.
How to reheat – To reheat, simply reheat in the microwave or a 400F oven or air fryer for 7-10 minutes until hot.

- 1 lb. ground beef
- 1 lb. mini bell peppers cut in half lengthwise, seeded
- 8 ounces cheese shredded
- salt and black pepper to taste
- 1/2 teaspoon garlic powder

- Arrange the peppers in a single layer on the air fryer liner. Cook them in the air fryer for 5-10 minutes.
- In the meantime, in a large skillet over medium heat, add the ground beef and cook it through.
- Season well with salt, black pepper, and garlic powder.
