Air Fryer Low-Carb Mini Stuffed Peppers Nachos Recipe
These air fryer low-carb mini stuffed peppers nachos are the perfect healthy meal, snack, or appetizer. Loaded with protein and packed with flavor, these mini bell pepper nachos are so good, that you won't even miss the carbs. These nachos made with mini peppers are a fun and delicious way to enjoy loaded nachos without the carbs.

- 1 tablespoon oil
- 1 lb. ground beef
- 1 lb. mini bell peppers cut in half lengthwise, seeded
- 8 ounces cheese shredded
- salt and black pepper to taste
- 1/2 teaspoon garlic powder
Slice the peppers lengthwise, then remove the stems and seeds.
Preheat your air fryer to 400°F. Spray an air fryer liner with a cooking spray. Or use some parchment paper.
Arrange the peppers in a single layer on the air fryer liner. Cook them in the air fryer for 5-10 minutes.
In the meantime, in a large skillet over medium heat, add the ground beef and cook it through.
Season well with salt, black pepper, and garlic powder.
Add in your optional fillings at this point. (see notes above for filling suggestions)
Add the ground meat mixture to each mini sweet pepper.
Top with the shredded cheese.
Put them back in the air fryer for another 5-8 minutes until the cheese is nicely melted and golden brown.
Alternatively, you can cook your mini pepper nachos in the oven instead. Broil them on high for 3 minutes. This will also allow the cheese to melt and brown a bit.
Remove from the air fryer and garnish with your favorite toppings. Enjoy!
