Cabbage is one of my favorite vegetables. I haven’t met a cabbage recipe I didn’t like. I always have cabbage in the fridge and I have a couple of cabbage recipes that I like to make often. Stir fry is one of them. It takes no time to make, it is light and healthy and so much better for us than takeout.

Ingredients
- Ground turkey – I love using ground turkey for this recipe. It is healthier and better for us. It is also a lean and more affordable substitute for ground beef.
- Cabbage – I love cabbage and I love sautéing cabbage as it absorbs all the wonderful flavors of the meat and sauce. You can eat a lot of cabbage as it is low in calories but very nutritious.
- Eggs – I love adding scrambled eggs to the dish. It adds some extra protein and another layer of flavor! Eggs also make this dish feel more like the takeout stir fry favorite we all love.
- Stir fry sauce – you can use your favorite brand of stir fry sauce or make your own. I usually just use a low-sodium soy sauce. You can also use coconut aminos, tamari, hoisin sauce, sriracha, or red chili paste.
Substitutions and variations
Meat – If you would like to substitute the meat, you can use ground beef, ground pork, or ground chicken. You can also use meat strips instead of ground if you’d like.
Vegetables – You can use prepackaged coleslaw mix that contains mostly shredded green cabbage and carrots. Find it in the refrigerated section of the produce aisle with the prepackaged lettuce mixes. You can also add any other vegetables such as mushrooms, onions, scallions, snow peas, zucchini, broccoli, etc.
How to make this delicious turkey and cabbage stir fry
Heat olive oil in a large skillet or a wok. Slice the cabbage. Cook the ground turkey by breaking it up into small pieces using a wooden spoon or my favorite meat chopper.
Once the ground turkey is no longer pink and is now browned, add the sliced cabbage. Season with salt, pepper, and garlic powder and stir well.
Sauté until the cabbage is tender. I add 1/4 cup water to the skillet and cover it with the lid. It helps the cabbage cook. Move the cabbage and meat mixture to the sides of the skillet, add 2 eggs, and stir well to scramble before you stir the whole mixture together.
I then remove the lid and add the soy sauce. Stir well to combine.
Serving Suggestions
- Rice – You can serve this stir fry over steamed white or brown rice, fried rice, or cauliflower rice.
- Pasta – you can serve this your favorite kind of noodles pasta. Try ramen noodles, Udon, or even rice noodles.
- Lettuce wrap – for a low-carb option, use a nice butter lettuce leaf, fill it up with the stir fry, roll it up, and enjoy!

Ground Turkey and Cabbage Stir Fry
Ingredients
- 1 pound ground turkey
- 1 small head of cabbage or 1/2 large head of cabbage
- 1 tablespoon olive oil
- 3 tablespoons low-sodium soy sauce
- 2 eggs
- 1/4 cups water
- 2 teaspoons garlic powder
- Salt and black pepper to taste
Instructions
- Heat oil in a large pan or skillet, add the ground turkey, and break it up into small pieces with a spatula or a meat masher, as it cooks.
- Cook until no longer pink and it is browned. Season with salt, pepper, and garlic powder.
- Slice the cabbage and add it to the skillet. Stir well. Add the water and cover with a lid.
- Cook, stirring occasionally, until the cabbage is tender, about 10 to 15 minutes.
- Remove the lid and sauté for another 5 minutes or until the liquid is gone.
- Crack the eggs in a bowl.
- Create space in the center of the skillet and add the eggs. Gently stir them until the eggs are cooked.
- Stir the eggs into the rest of the mixture to combine.
- Add the soy sauce and stir well.
