Ground Turkey and Cabbage Stir Fry

Ingredients
  

  • 1 pound ground turkey
  • 1 small head of cabbage or 1/2 large head of cabbage
  • 1 tablespoon olive oil
  • 3 tablespoons low-sodium soy sauce
  • 2 eggs
  • 1/4 cups water
  • 2 teaspoons garlic powder
  • Salt and black pepper to taste

Instructions
 

  • Heat oil in a large pan or skillet, add the ground turkey, and break it up into small pieces with a spatula or a meat masher, as it cooks.
  • Cook until no longer pink and it is browned. Season with salt, pepper, and garlic powder.
  • Slice the cabbage and add it to the skillet. Stir well. Add the water and cover with a lid.
  • Cook, stirring occasionally, until the cabbage is tender, about 10 to 15 minutes.
  • Remove the lid and sauté for another 5 minutes or until the liquid is gone.
  • Crack the eggs in a bowl.
  • Create space in the center of the skillet and add the eggs. Gently stir them until the eggs are cooked.
  • Stir the eggs into the rest of the mixture to combine.
  • Add the soy sauce and stir well.
