Ground Turkey and Cabbage Stir Fry

- 1 pound ground turkey
- 1 small head of cabbage or 1/2 large head of cabbage
- 1 tablespoon olive oil
- 3 tablespoons low-sodium soy sauce
- 2 eggs
- 1/4 cups water
- 2 teaspoons garlic powder
- Salt and black pepper to taste
Heat oil in a large pan or skillet, add the ground turkey, and break it up into small pieces with a spatula or a meat masher, as it cooks.
Cook until no longer pink and it is browned. Season with salt, pepper, and garlic powder.
Slice the cabbage and add it to the skillet. Stir well. Add the water and cover with a lid.
Cook, stirring occasionally, until the cabbage is tender, about 10 to 15 minutes.
Remove the lid and sauté for another 5 minutes or until the liquid is gone.
Crack the eggs in a bowl.
Create space in the center of the skillet and add the eggs. Gently stir them until the eggs are cooked.
Stir the eggs into the rest of the mixture to combine.
Add the soy sauce and stir well.
