This is one of my favorite recipes. I love the flavor of the sausage and the peppers and onions cooked together. It tastes like a slow-cooked meal and it is filling and satisfying but the best part is that it actually is very quick to make. This recipe is also great to bring to family gatherings, potlucks, and parties. You can make a bigger batch of it since it tastes great reheated as well.

Ingredients
- Italian Sausage – I like to use mild Italian sausage, but you could use any sausage you like. You can use sweet sausage, hot sausage, smoked sausage, or a combination of any of these. Chicken or turkey sausage will work for this recipe as well.
- Peppers – Use whatever color bell pepper you like. I like to use yellow, red, or orange bell peppers. You could use green as well, but I find them a bit bitter.
- Onion – I like using yellow onion for this recipe, but white, red, sweet onion, or Vidalia onions will work too.
- Marinara Sauce- use your favorite homemade or store-bought marinara sauce. Rao’s is a tomato sauce we love to use and I always have some in my pantry.
How to make this one-skillet sausage, peppers, onions meal
Start by cooking the sausages in a skillet. While the sausage is cooking, slice the onions and peppers. Add the onions and peppers to the skillet, season, and saute until they are nice and browned.
Once the sausage is browned on all sides (the inside will be uncooked but will continue cooking with the rest of the ingredients), remove them from the skillet and let them cool down on a large cutting board.
Cut the sausage into pieces and add them back to the skillet with the peppers and onions. Add the marinara sauce and water, lower the heat, and cook for about 10-15 minutes until the sauce is thickened a bit. Add seasonings per taste, and enjoy!

Italian Sausage Peppers and Onions Stir Fry
Ingredients
- 1 package mild Italian sausage 5 links
- 2 large bell peppers sliced
- 2 medium yellow onions sliced
- 1 cup marinara sauce tomato sauce
- 1 tablespoon olive oil
- 1/2 cup water
- 2 teaspoons garlic powder
- salt and black pepper to taste
Instructions
- Heat the olive oil over medium heat in a large pan that has a lid. When the oil is hot, add the sausages and brown them slowly on all sides.
- While the sausage is cooking, cut the onions and the peppers into ½-inch strips.
- Remove the sausages from the pan and set them aside on a large cutting board to cool down. (Note: You do not need to cook the sausages through at this point.)
- Add the onions and peppers to the pan. Season with salt, pepper, and garlic powder, and cook until soft and browned (5-10 minutes)
- In the meantime, slice the sausages into ½” – 1” pieces. The sausage will still be pink in the middle.
- Add the sliced sausages back to the pan with the peppers and onions and stir well to combine.
- Add the tomato (marinara) sauce and the water and stir well to combine.
- Season per taste with salt and black pepper.
- Put the lid on, and cook for 10-15 minutes on medium-low heat, until the sauce has reduced a little and the sausages are cooked all the way through.
- Serve over polenta, with rice or pasta, on a hoagie roll, or just on its own, and enjoy!
