Quick and Easy Pasta Salad

This quick and easy pasta salad takes only minutes to make with rotini pasta, cherry tomatoes, olives, red onion, and mayo. This delicious cold pasta salad is so versatile. Serve it as a main dish, or a side dish, at potluck parties, and BBQs.

Ingredients
  

  • 2 boxes 7.5oz each of Betty Crocker Suddenly Pasta or 1lb (16oz) of your favorite small pasta (rotini, penne, bow ties, or elbow)
  • 1- pint cherry tomatoes halved
  • 1/2 cup red onion diced
  • 1/2 cup pitted olives halved
  • 8 ounces salami slices cut into 1/2-inch-wide strips
  • 3 tablespoons mayo or more if you’d like the pasta salad creamier

Instructions
 

  • In salted boiling water, cook pasta according to package instructions. Drain and let it cool down.
  • In a large bowl, add red onion, olives, tomatoes, salami, and cooled pasta.
  • In a small mixing bowl, prepare vinaigrette according to package instructions, or if not using the pasta box, mix 3 tablespoons of olive oil and 2 tablespoons of red wine vinegar, salt, and pepper to taste. Another option for the dressing is to mix 2/3 cups of olive oil and 1 package of Ranch seasoning.
  • Pour vinaigrette over pasta salad, then stir gently to combine all the ingredients. Add the mayo and toss again.
  • Refrigerate for 1 hour before serving.
