Cuisine American, Italian
- 1 lb 453g chicken sausage
- 1 yellow onion diced
- 4 garlic cloves minced
- 1.5 oz 45g tomato paste (or half a cup of tomato sauce)
- 12 oz pasta
- 3 tablespoons cream cheese
- 1 cup of shredded Mozzarella cheese
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1 cup water
Bring a medium pot of salted water to a boil, add pasta, and cook it according to the instructions. Cook stirring occasionally, until al dente, 9-11 minutes. When draining, reserve 1/2 cup of pasta water.
While the pasta is cooking, in a large pan, heat a drizzle of oil over medium heat. Add the sausage. Break up into little pieces as much as you can. Cook for 3-5 minutes.
Add the diced onion and the minced garlic. Cook until sausage is browned and cooked through.
Stir in the tomato paste and stir everything together until it is all well coated.
Slowly add the water and stir until everything is well combined. Reduce heat to medium-low and let it simmer, stirring occasionally, for 3-5 minutes.
Season with salt and pepper.
Stir in the cream cheese and half of the shredded cheese.
Drain the pasta.
Add the drained pasta to the pan with the meat sauce. Slowly stir until everything is coated in the creamy sauce. Season with salt and pepper to taste. Add a splash of the reserved pasta water, if desired.
Serve warm, top with parsley, if desired, and the remaining shredded cheese.
Enjoy!
