Crustless Quiche – quick and easy

This crustless quiche is one of the easiest and versatile quiche recipes. You can use up what you have in your fridge and adapt this recipe to your likings. It is so quick and easy to make, yet it is very healthy and filling. This crustless quiche is loaded with flavors and it is light, fluffy, and delicious.  It is made with just six ingredients and perfect for a busy weeknight dinner, breakfast, or brunch.

I make this dish often. It is one of my favorite egg recipes to make when we are craving something healthy but filling and guilt-free at the same time. This crustless quiche recipe is a great recipe to make when you have vegetables in the fridge that you don’t want to go bad. It is quick and easy to make so it is also perfect for those busy weeknights.

Since there is no crust, this crustless quiche is lighter, healthier, gluten-free, and even easier to make than a classic quiche. Ingredients

Eggs – of course, it would not be a quiche without the eggs.

Milk – Traditional quiche is made with heavy cream, but I find that using milk instead makes this quiche much lighter and healthier without compromising any of the flavor.

Spinach – I love adding spinach to my quiche. It is a great way to add leafy green vegetables. Spinach is packed with several vitamins and minerals, and it is great for our overall health.

Onion – Sauteed onion adds a great flavor to this quiche.

Tomatoes – I personally love adding fresh tomatoes to omelets and quiches. It helps make the quiche taste fresh and light.

Feta cheese/shredded cheese – The saltiness and the flavor of the feta cheese make this quiche so delicious!

Substitutions and variations

This crustless quiche is so versatile and adaptable to your personal liking.

Meat – You can use ham or bacon, or cooked breakfast sausage.

Vegetables – feel free to use whatever veggies you love and have on hand and in your fridge. You can use mushrooms, artichokes, asparagus, bell peppers, zucchini, and green onion.

Cheese – feel free to use any cheese you like. You can use Swiss, goat, parmesan, or mozzarella cheese just to name a few.

Serving suggestions

If you are serving the quiche as a main meal for dinner, you can have a side of leafy green salad or a pasta salad. Give my pasta salad or my potato salad a try – you will not be disappointed! If you are enjoying this crustless quiche for breakfast, a fruit salad or just a side of fruit will go great together. If you’d like, try broiling some kielbasa links for an additional layer of flavor and protein.

Storing tips

This quiche can be served warm, cold, or at room temperature. Leftovers should be covered and refrigerated. They’ll keep for 3-4 days in the fridge. To freeze individual slices that have already cooled completely, wrap them in plastic wrap and foil, and then place them into airtight containers or zip-lock bags in the freezer. To reheat, just unwrap the slice and place it on a microwave-safe dish at 30-second intervals for about 1 minute until heated through.

How to make this quick and easy crustless quiche

Start by sautéing the onion until it is translucent. Add the chopped spinach and sauté it until it wilts down. Season with salt, pepper, and garlic powder.

In the meantime, crack the eggs in a large mixing bowl. Add in the milk and half of the shredded cheese.

In a pie dish, add the onion and spinach mixture, then add the fresh diced tomatoes and the crumbled feta.

Pour over the egg mixture and top it with the rest of the shredded cheese.

Bake until the eggs have set, and the top is nice and golden brown.

Easy Crustless Quiche

This crustless quiche is made with fresh spinach, tomatoes, onion, eggs, and two kinds of cheese. It is quick and easy to make and it is perfect for breakfast, lunch, brunch, or dinner. This low-carb and healthy crustless quiche is full of flavor and filling.

Ingredients
  

  • 1 medium onion diced
  • 2 cups fresh spinach chopped
  • 5 eggs
  • 1/2 cup milk
  • 1 fresh tomato diced
  • 3-4 oz feta cheese crumbled
  • 1 cup shredded cheese your choice of cheese
  • Salt and pepper to taste
  • 1 teaspoon garlic powder optional

Instructions
 

  • Preheat the oven to 350 degrees F.
  • Spray a 9-inch pie/quiche dish with cooking spray and set aside.
  • In a large skillet, heat the olive oil. Then add the onion and cook, stirring intermittently over medium heat until the onion is translucent.
  • While the onion is cooking, chop the spinach and the tomato.
  • Add the spinach to the skillet and cook until it wilts down. About 3-5 minutes.
  • Season with salt, pepper, and garlic powder (optional).
  • In the meantime, crack the eggs in a large mixing bowl. Add the milk, half the shredded cheese, salt, and pepper, and stir well.
  • Once the vegetables are cooked, pour them into the quiche/pie dish. Then add the chopped tomato and the crumbled feta cheese right on top.
  • Pour the egg mixture over it, gently smoothing it out so it is all even.
  • Bake in the oven for 40-45 minutes or until the eggs have set and the top is nice and golden brown. (Note: this recipe is for fluffy and light crustless quiche)
  • Let it cool down for 10 minutes before slicing.
  • Serve and enjoy!
