To freeze individual slices that have already cooled completely, wrap them in plastic wrap and foil, and then place them into airtight containers or zip-lock bags in the freezer. To reheat, just unwrap the slice and place it on a microwave-safe dish at 30-second intervals for about 1 minute until heated through.
How to make this quick and easy crustless quiche
Start by sautéing the onion until it is translucent. Add the chopped spinach and sauté it until it wilts down. Season with salt, pepper, and garlic powder.
In the meantime, crack the eggs in a large mixing bowl. Add in the milk and half of the shredded cheese.
In a pie dish, add the onion and spinach mixture, then add the fresh diced tomatoes and the crumbled feta.
Pour over the egg mixture and top it with the rest of the shredded cheese.
Bake until the eggs have set, and the top is nice and golden brown.

Easy Crustless Quiche
Ingredients
- 1 medium onion diced
- 2 cups fresh spinach chopped
- 5 eggs
- 1/2 cup milk
- 1 fresh tomato diced
- 3-4 oz feta cheese crumbled
- 1 cup shredded cheese your choice of cheese
- Salt and pepper to taste
- 1 teaspoon garlic powder optional
Instructions
- Preheat the oven to 350 degrees F.
- Spray a 9-inch pie/quiche dish with cooking spray and set aside.
- In a large skillet, heat the olive oil. Then add the onion and cook, stirring intermittently over medium heat until the onion is translucent.
- While the onion is cooking, chop the spinach and the tomato.
- Add the spinach to the skillet and cook until it wilts down. About 3-5 minutes.
- Season with salt, pepper, and garlic powder (optional).
- In the meantime, crack the eggs in a large mixing bowl. Add the milk, half the shredded cheese, salt, and pepper, and stir well.
- Once the vegetables are cooked, pour them into the quiche/pie dish. Then add the chopped tomato and the crumbled feta cheese right on top.
- Pour the egg mixture over it, gently smoothing it out so it is all even.
- Bake in the oven for 40-45 minutes or until the eggs have set and the top is nice and golden brown. (Note: this recipe is for fluffy and light crustless quiche)
- Let it cool down for 10 minutes before slicing.
- Serve and enjoy!
